Blanca’s Pickled Red Onions

My Mother in Law, Blanca has been making these Jalapeno Pickled Onions for us since the day she arrived in Canada from Mexico. Selfishly, I’m happy to finally have access to this recipe. And I’m sure she’s happy to know I won’t be bugging her to make them for me each week. Thank you for sharing your recipes with us Blanca!!!!! So grateful to have you in our family.

INGREDIENTS

1 red onion, sliced

1 fresh jalapeno, thinly sliced

2 tbl olive oil

2 tbl apple cider vin

1 tsp salt

1/2 tsp black pepper

Juice from 1 lime

Combine the above in a glass jar. Set aside at room temperate for 1 hours (up to 4 hours). At this point you can either eat right away or store in the fridge for up to two weeks!

You will probably want to double this recipe—you’ll end up adding them to everything… tacos, bowls, salads, breakfast, nachos.
