Peanut Butter Curry Noodle Salad

PEANUT BUTTER CURRY SAUCE

1/4 cup peanut butter

1/2 tsp miso paste

2 tbsp maple syrup

2 tbsp tamari

2 garlic cloves, minced

2 tsp grated ginger

1.5 tsp curry powder

1/4 cup water

Add all ingredients into a blender a mix or just stir well with a spoon.

P.S. You are going to want to eat this sauce with a spoon, so we recommend doubling or tripling the recipe!

REMAINING BOWL INGREDIENTS

Add a mix of everything you love! Below is how we usually prepare our noodle bowls:

Rice noodles, cooked to package instructions

Cilantro

Mint

Fresh jalapeño

Green onion

Grated carrot

Avocado

Raw cabbage, thinly sliced

Cucumber

Seeds/nuts

Fresh lime

Smoked tofu cut into 1” cubes

Layer your bowl with noodles, sauce, fresh veg, tofu and more sauce! ENJOY!!
