Can-o-Chili Mac Hack

I first saw this idea on Heidi Swanson’s instagram. Essentially, it’s the lazy gal’s chili sunday when you want a chili sunday, but you haven’t decided that until it’s time to eat. No joke, this meal took less than 20 min to make. Also, you can’t fuck it up. Throw whatever inside/on top. So here we go:

Vegan Chili Mac

Makes 3 portions

1 can chili (I got mine from Costco)

1 can black beans, drained and rinsed

1 tbl cocoa/cacao

3/4 can beer (or veg broth…but the beer is so good!)

2 chipotles

1 tbl tomato paste

2 handfuls cooked pasta (we used GF macaroni shells)

Combine all ingredients (except pasta) in a medium pot. Bring to a boil then simmer unto you reach desired consistency. Mush the chipotles with the back of your spoon until they are broken up and dispersed throughout the chili. When you’re ready to eat, fold in the pasta. Add more beer if you want to loosen it up a bit.

Top with anything you like! We added avocado, green onions, hemp hearts, tomato, sprouts… everything! We also had left over cashew hollandaise from breakfast, so we through that in to cream it up!
